Lush Cake...

I first tasted a Lush Cake was when one of my aunt made it for me for my birthday of 2010. I instantly fell in love with it and so did the rest of the family.

I can't help but to ask for the recipe and have been making them since then. It is for sure always a hit regardless if there's an occasion or not. Lately tho, I've been messing around with coloring LOL... so it doesn't look the same each time. But that's not the point of this post LOL...

Thing is... I thought of sharing this recipe with you since quite a few of my friends wanted to try to make this. So here it is...

The following are the ingredients that you'll need...

All purpose flour
Powdered sugar
Chopped pecan nuts
3 instant lemon pudding
3 8oz cream cheese
1 16oz cool whip
3 cups cold milk
Step One:
In a Large Bowl, add 2 Cups all purpose flour, 2 Softened butter sticks and 1 Cup chopped pecan nuts. Mix together by hand and spread flat to 9.63 x 13.38 grease pan.

Bake at 350F degree for 20 to 30 minutes or until golden brown and set aside to cool!
Step Two:
In a large bowl, beat 3 pkg 8oz softened cream cheese, 2 cups powdered sugar and 1 cup cool whip at a high speed (mixer) until fluffy.

Spread on top of step one (the pecan crust) and make sure crust is cold or cool before you spread it.
Step Three:
In a large bowl, beat 3 pkg instant lemon pudding and 3 Cups cold milk on high speed until mixture thickened.

Spread lemon pudding on top of step two.
Spread the rest of the cool whip over top of step three and sprinkle with chopped pecan nuts, then refrigerate overnight...

Then VOILA! Serve and enjoy!!! :)

If you by chance decided to try this recipe out, make sure you drop by again and lemme know what you think and if all possible, with pictures... Have a great one guys :)

When I'm Angry...

Everyday I'm happy but everyday I'm stressed out also...

It's not in my nature to be a homemaker, but I have been since the last quarter of 2009 up to this day and have to embrace that for a while too!

So since that, many times when I'm angry... I ask myself if I even have the right to be. Or better yet, if I'm really angry at what I was angry about. Or if it's because of my hormones. Or maybe I'm just sick of this lifestyle that the littlest things get to me?!

I don't know... I really don't... Sigh...

Coloring Cakes...

I decided to bake earlier today and because it was rainy and cold out, I did not want to go out to get the ingredients that I would need... so I went ahead and used what we currently have in the kitchen.

Normally, I would bake some chocolate related cake LOL but with what I have, I had to go by the simple white cake. But somewhere in the pantry, I saw my sister had this neon food colorings and I thought... hey... for the heck of it, why not?!!!

It was in four colors - Turquoise, Pink, Purple and Lime Green... So I separated the batter into 4 for each one.

The funny thing is, after I mixed all that, I realized that I don't have enough bake pans (I left mine at my mom's house) and there's no way I have the time to bake one or two at a time... So I used ramekins for time's sake and that one heart shaped pan for the extra mixture...

So while the cake was in the oven, I searched online for some icing recipe. I tried one out and my goodness... it was way too sweet for me... so not going to work so I trashed it! Then I ran out of shortening and butter hahahaha... so forget about the icing.

When the cake was done and ready for cooling... I went ahead and cleaned after my mess. And just as I turned around and was gonna take a picture of how the cake looked... Noel freaking took a huge bite on it! LOL!!!! He thought I had already taken the picture because I was already cleaning up! Welp... you gotta work with what you got and do what you gotta do! LOL

Anyhoo, I guess that bite added some character into it LOL!!!! And as for the heart shaped pan... I just had all the colors mixed together and here's the outcome...

So that's one of the fun things you can do with cakes and sure did put a smile on my daughter's face. Hope you guys have/had a reason to smile today... Till I blog again!
